Making Tequila

Although it's possible to make many authentic liquors yourself, Tequila involves some major effort to do from scratch. Large, mature plant 'hearts' are harvested, roasted in large ovens, and pressed to produce the sweet juice which is then fermented and distilled.

For most people, that would be an onerous task! Instead, use Agave syrup to produce your own sweet wash, ferment it out and pot distill it. Much easier! You can either use 100% agave syrup, or half syrup and half plain sugar. Start your wash with a specific gravity of 1.08 and ferment to dryness (which will be around 1.00). Then distill in a pot still.
