Wood chips or pieces are used to imitate aging of spirits in oak barrels. Many of these oak chips are charred which imparts a smokey flavor to your moonshine, vodka or whiskey. This is especially helpful if you are making Scotch, since this liquor has a heavier charred taste than many other whiskies. If you want a lighter taste, use fewer chips and age for a short time. For more robust flavour, use more heavily toasted chips and age longer. Strain them out and filter through coffee filters before bottling. They can be used along with essences for a very authentic flavour.
